College Barbecue: A Taste of Old-School North Carolina BBQ in Salisbury

Some pit stops happen because of careful planning. Others happen because you’re in the right place at the right time—and that’s exactly how we found ourselves at College Barbecue in Salisbury, North Carolina.

We were in town for a special reason: our daughter was participating in Girls on the Run, an incredible program her school partnered with. With families, schools, and kids from all over the area coming together, it was eye-opening to see just how strong the community is in Salisbury. After the event, we did what we always do—we searched for a local BBQ joint. That search led us straight to one of western North Carolina’s true originals.

An OG BBQ Joint with 1960s Diner Vibes

College Barbecue has been around since the 1960s, and it hasn’t chased trends or tried to reinvent itself—and that’s part of the charm. Walking inside feels like stepping into a time capsule. The diner-style setup, the menu, and the atmosphere all reflect a simpler era of North Carolina barbecue.

This isn’t a place with brisket, ribs, or experimental flavors. True to western NC tradition, the focus is on pulled pork and chicken, with pulled pork being the star. The menu is straightforward, familiar, and built to feed locals who’ve been coming here for decades.

The Food: Simple, Traditional, and Honest

We ordered the barbecue platter with baked beans and red vinegar-based slaw. While we’re not usually fans of red slaw, this was easily the best version we’ve had so far. It was well-balanced, tangy, and paired nicely with the pork.

The pulled pork itself had a classic salt-and-pepper profile with minimal seasoning, cooked to about 190 degrees so it could be sliced or chopped. We chose chopped and appreciated that it wasn’t chopped too fine—leaving good chunks of pork with great texture. The sauce wasn’t the best we’ve had in western NC, but it worked well with the meat and stayed true to the restaurant’s old-school roots.

The baked beans were basic and familiar—nothing fancy, but solid. The hush puppies were a highlight: crispy on the outside, soft on the inside, and fried separately so they didn’t pick up any off flavors. Sweet tea was balanced and drinkable, and the crinkle-cut fries were cooked just right—crispy outside, fluffy inside.

The Experience: Where College Barbecue Really Shines

What makes College Barbecue special isn’t just the food—it’s the experience. On a busy Saturday, locals were constantly coming and going. Staff greeted customers like family, and you could tell this place is woven into the fabric of the community.

College Barbecue represents the foundation that modern BBQ is built on. While it may not land in our Top 25 due to its simplicity, it’s an important stop for anyone who wants to understand where North Carolina barbecue came from.

Final Thoughts

If you’re ever in Salisbury, College Barbecue is absolutely worth the stop. It’s honest, historic, and unapologetically traditional—a reminder that barbecue doesn’t always need to be flashy to be good.

This is one of those places you visit not just to eat, but to experience a piece of North Carolina BBQ history.
