


How Pit Stop Adventures Rates North Carolina BBQ
At Pit Stop BBQ Reviews, our goal is simple: travel across North Carolina and highlight the BBQ joints and pitmasters that make this state special.
We are not certified competition judges, and we are not trying to judge BBQ using competition rules. Competition BBQ has its own standards that are very different from the way barbecue is traditionally served in restaurants.
Our reviews are based on our personal visits and experiences at each location. We focus on the food, the craft of barbecue, and the overall experience of visiting the restaurant.
Everyone’s taste is different, and that’s part of what makes BBQ culture so fun. Our ratings are simply our honest opinion from the visits we make as we travel the state.
Each location is scored out of 100 points across the following categories.
Our Scoring Criteria
Taste – 30 Points
Taste is the most important factor in our scoring. At the end of the day, great BBQ has to taste great.
This category looks at the overall flavor of the meat, seasoning, bark, and how well the smoke, sauce, and pork work together in each bite.
Smoke Presence & Pit Work – 15 Points
North Carolina BBQ is built around the craft of cooking meat low and slow over smoke.
In this category we look for the depth of smoke flavor, bark development, and signs of skilled pit work. This reflects the time, patience, and experience it takes to cook great barbecue.
Sauce – 15 Points
Sauce is an important part of North Carolina BBQ tradition.
We evaluate how well the sauce complements the meat. This can include Eastern-style vinegar sauces, Lexington-style dip, or house recipes unique to each restaurant.
The goal is balance — the sauce should enhance the barbecue, not overpower it.
Juiciness & Texture – 15 Points
Properly cooked BBQ should be tender, juicy, and full of flavor.
This category looks at moisture level, tenderness, and consistency of the pork or other meats served.
Atmosphere & Experience – 15 Points
Barbecue is about more than just the food.
We consider the overall atmosphere of the restaurant, including the feeling when you walk in, the energy of the crowd, and the authenticity of the place. Old-school BBQ joints, family traditions, photos on the walls, and visible pits all contribute to the experience.
Some places are modern, some are historic — both can score well if the experience reflects pride in the craft of BBQ.
Sides – 10 Points
Traditional BBQ sides are part of the overall meal.
We consider items like slaw, hushpuppies, baked beans, fries, potato salad, and other classic sides when calculating this portion of the score.
Our Approach
When we visit a restaurant, we try to learn and share the story behind the BBQ.
Whenever possible we include information about:
• When the restaurant opened
• The family or pitmaster behind the business
• Cooking methods and pit styles
• The role the restaurant plays in its local community
North Carolina BBQ has a rich history, and we want to help highlight the people and traditions that keep it alive.
Food, Not Politics
Our reviews are focused on the barbecue and the experience we have at each restaurant.
We do not judge restaurants or owners based on their religious beliefs, political views, or personal opinions. Our focus is strictly on the food, the craft of barbecue, and the experience of visiting each BBQ joint.

This project exists to celebrate the incredible BBQ culture across North Carolina and to highlight the pitmasters who spend long nights and early mornings tending the fires.
If our reviews help more people discover a great local BBQ spot or learn a little more about the history of North Carolina barbecue, then we’re doing exactly what we set out to do.
A Note on BBQ Opinions
Barbecue is personal, and everyone has their favorite spot. In North Carolina especially, BBQ is something people are passionate about and love to debate.
Our ratings are simply our honest opinions based on our visits. We know not everyone will agree with every ranking, and that’s part of what makes BBQ culture so fun.
Even within our own team we sometimes disagree on scores, which usually means meeting somewhere in the middle and finding a fair compromise.
At the end of the day, we’re just BBQ fans traveling the state, sharing our experiences, and celebrating the incredible barbecue culture North Carolina has to offer.
